(Red Free) This is an early ripening, crisp, sweet-tart, red-green apple that is a mixture of Jonathan, Melba, and Raritan. Developed by Purdue, Rutgers, and Illinois Co Op.They can be stored for 2-3 weeks.

ZESTAR

An early season, crisp, juicy, and sweet apple that has been described to have a brown sugar undertone. This is another good all-around apple for eating, sauce, baking, and juice. It also has a long 2-3 month storage life.

PRIMA

This apple was first bred at the Department of Horticulture at the Illinois Experiment Station in Urbana, Illinois. This is a juicy, crisp, fragrant apple that is good for pies and sauce. Can only be stored for a few weeks.

MCINTOSH

A creamy, aromatic, sweet apple that is best for eating, juice, or sauce. If the skin is left on during applesauce production, the sauce will be pink! Can be stored 2-3 months.

GALA

A sweet apple with a thin skin that is loved by kids. This is a good apple for sauce and especially eating. Does not maintain flavor and crunch during storage.

HONEYCRISP

(Honeycrunch) One of the most popular apples!  A very juicy, crisp and sweet apple that is a great all- purpose apple. Can be stored 3 months or more.

 
 
 

GOLDEN SUPREME

A mildly sweet, juicy, crisp yellow apple that is great for eating and baking. (You may need to reduce the amount of sugar when baking!) A good apple for salads and garnishes because it does not discolor.  Can last several months if refrigerated.

JONAMAC

This is a firm, crisp apple with a tart flavor and somewhat spicy. It is the offspring of Jonathan and McIntosh apples. It is a good apple for eating, cooking, and sauce, but tends to be mushy in baking. Can be stored 2-3 months.

 
 

CORTLAND

This is a crisp, juicy apple with a slightly tart flavor. They are good for eating, baking, salads, and garnishes since they do not discolor quickly.

 
 
 
EARLY FUJI

An earlier version of Red Fuji. This is a juicy, crisp, sweet apple with an aromatic flavor. They are great for eating, baking, and juice. Can be stored for 3 months or more.

 
 
 
JONATHAN

This is a crisp, juicy, red apple with a good balance of sweet and spicy. These are a good all-around apple and blend well with other varieties in cider, juice, pies, and sauces. Can be stored 3-4 months.

 
 
 
CRIMSON CRISP

This medium sized apple is very crisp with a sweet and spicy flavor. This apple is great for desserts and eating. It also has a long 2-3 month storage life if refrigerated.

 
 
 
GOLDEN DELICIOUS

This is a firm, crisp yellow apple with a sweet flavor. The more mature the apple, the sweeter the flavor. It is a good all-around apple. However, cooks should reduce the amount of sugar when cooking with this variety. This is a great apple to use in salads and as garnishes since it is resistant to discoloration. RED DELICIOUS

This is a tough-skinned, sweet, juicy red apple. It is a good eating apple and salad apple, but not highly recommended for baking. Can be stored 3-5 months.

This apple, believed to be a relative of the Golden and Red Delicious, is crisp and juicy with the perfect combination of sweet and tart. These are good for eating, baking, salads, and garnish since they are resistant to discoloration. Can be stored for 2-3 months.

STAYMAN WINESAP

This is a tart, firm, tangy, red apple that has a spicy wine flavor. (Not as firm as its Winesap parent.) They are mostly used in cooking, cider and juice. Can be stored 2-3 months.

 
 
 
MUTSU

(Crispin) This is a firm, juicy apple with a moderately sweet flavor. It is great for eating, sauces, juice, and baking. This apple will take on a sweeter flavor in cold storage. Can be stored 3-4 months.

RED FUJI

(Fuji) This is a juicy, crisp, sweet apple with an aromatic flavor. They are some of the best apples for applesauce. They are great for eating, baking, and juice. Can be stored for 3 months or more.

This is a tart, very firm, spicy apple with a wine-like flavor. They are best for baking, cider, and juice. Can be stored 3-4 months.

 
 
 
GOLDRUSH

Illinois’ state apple. Developed by the Purdue, Rutgers, and Illinois Co Op.  This is a crisp, juicy apple with a good balance of sweet and tart, so named for its golden color and rush of flavor.
